Varscona Hotel on Whyte & Ampersand 27 are looking for an exciting & enthusiastic addition to our culinary team! The Sous Chef is responsible for the duties and focus areas assigned by the Executive Chef and Executive Sous Chef. Responsible for all aspects of kitchen and food operations in the absence of Executive chef and Executive Sous Chef.
ESSENTIAL JOB FUNCTIONS:
Monitor cooks adherence to all protocol and product standards.
Oversee the maintenance of inventory stock and ensure it is in good order.
Oversee the execution of service and ensure it is up to standard of quality mandated by Executive Chef.
Ensure preparation of mis-en-place is fulfilled to a standard suitable for the Executive Chef and in quantities that allow for uninterrupted service.
Fill out all log books and prep board from to ensure appropriate levels of par stock and mis-en-place are requisitioned to be produced for the upcoming day/week.
Abide by all Provincial, Federal and Corporate requirements pertaining to Food Safety.
Communicate daily with Executive Chef or other Sous Chefs to discuss pertinent restaurant events, functions, or special menus.
Assist Executive Chef in conducting tasting and menu development.
Communicate both verbally and in writing to provide clear direction to staff.
Minimum 2 year restaurant culinary experience required.
Finger/hand dexterity in order to operate food machinery.
Cleanliness and organization skills required.
Must have the ability to communicate in English.
Must be able to work varied shift work, including weekends and holidays.
Creative flair an asset.
Self-starting personality with an even disposition.
Must be willing to “pitch-in” and help co-workers with their job duties and be a team player.
Highly organized, results oriented and ability to work in a multi-functional team environment.
Security clearance required upon offer of employment.
